The MarraStone cooking surface offers the widest bandwidth of menu applications. Imported from the Naples region of Italy, this proprietary brick formulation is comprised of volcanic material, formulated to accept, retain, and give up heat as necessary.Â
Available in 4 configurations and can be vertically stacked up to four decks. The ELST allows additional cooking decks to be added as demand grows without taking additional floor space.
The independently controlled upper (ceiling) and lower (deck) thermostats provide sustainable precision cooking temperatures ranging from 200-950°F.
